Danish style Mustard-dill sauce

Danish variations on this sauce can contain egg yolks, and/or syrup or brown sugar. Some lace the sauce with a little cognac or honey.

Marinated whitefish

Whitefish is ideal when marinated and is perfect for the Christmas table, or as a light supper with delicious crispbread and a cold beer or mumma.

4–6 PORTIONS

2 sides of whitefish fillets

2 tbsp granulated sugar

2 tbsp fine salt

½ tbsp juniper berries

½ tbsp whole rose pepper

1 lemon, zest

dill

1. Begin by removing the bones from the whitefish filets with kitchen tweezers. Then, place the fillets in a pan. Sprinkle sugar and salt on top—half on each side.

2. Crush the juniper berries and rose pepper in a mortar and sprinkle over the fish. Also sprinkle with the lemon zest. Place the fillets together.

3. Let the fish stand in the fridge for 24–48 hours. Cut it thinly and garnish with extra rose pepper and dill if desired.
